We were invited to dinner with some new friends and I needed to come up with a desert on the fly. It was last Sunday and we don't go to the store on Sundays- so it was gonna have to be some concoction I could mix up with ingredients in the house. Well, the desert turned out delicious! The brownie was rich and minty chocolatey, with a frosting that's sweet and a little sour.
I used a brownie recipe I now and love but all the extra bits were new and I'm gonna share them with you!
BROWNIE RECIPE
➮ 4 oz Unsweetened Chocolate
➮ 2 Sticks Real Butter
➮ 1- 1 1/2 C Flour
➮ 1 1/3 C Sugar
➮ Pinch Salt
➮ 4 Whole Eggs
➮ 2 tsp Vanilla Extract
➮ ANDES Peppermint Crunch Baking Chips
DIRECTIONS
➮ Melt chocolate and butter over low heat.
➮ Add mixture to new bowl. Mix in dry ingredients and then wet. Mix until entire batter is wet. Do not worry about lumps
➮ Sprinkle Andies on top
➮ Cook 350 for 20-24 min. in a greased 9x11 pan.
If you're looking for a Homemade Vanilla Extract Recipe- here's the one I swear by. It makes all the difference in cooking, honestly. As for cream cheese frosting, I've tried oodles caboodle's of them- but I've adapted them into my own. This one started as a Pillsbury recipe.
CREAM CHEESE FROSTING RECIPE
➮ 8 oz Reduced Fat Cream Cheese
➮ 2 tbsp Butter
➮ 1 tsp Vanilla Extract
➮ 3 + C Powdered Sugar
DIRECTIONS
➮ Using a mixer, combine room temperature butter, cream cheese, and vanilla extract.
➮ Mix in 1 cup of powdered sugar at a time. Turn the mixer to a 8 or 9 and really let it go. You want it whipped really well- like start the mixer and walk away, just let it do its thing for a couple of minutes. Start looking at the consistency and sweetness around 3 cups of sugar. I like the frosting with a little over 3 cups.
➮ When brownies have completely cooled, spread frosting on top.
